Retinal cells get the color images on them and when you shift focus, the retina takes time to undo the colors in those cells. So, you see the picture of the cow oblivious to the color tint difference.
Good one. However I want to know how it works. The colors in the second picture also are the same as the first one. If the colors were to contain components in contrast, this would have made sense to me.
